Olive and pimento are a match made in heaven, but the pimento flavour is so often overshadowed by the olive. This Caesar uses the same flavour combination but gives the pimento the glory this time, as the spicy pimento paste is what really stands out when mixed together with gin and Mott’s Clamato Cocktail.

1. Rim a highball glass with citrus and rimmer.
2. Fill the glass to the top with ice.
3. Add the ingredients in the order listed.
4. Stir well to mix the cocktail, and garnish.
